Ingredients for Grilled Vegetable Skewers include: 1 red bell pepper, 1 yellow bell pepper, 1 zucchini, 1 yellow squash, 1 1/2-inch slice of red onion, and 1 red bell pepper, sliced into wedges.

• 2 minced garlic cloves • 2 tablespoons of olive oil

• To taste, add salt and pepper

• Eight wooden sticks (soaked in water for at least 30 minutes)

Heat up your grill to a medium-high setting.

Combine the bell peppers, zucchini, squash, onion, garlic, extra virgin olive oil, salt, and pepper in a big bowl. Toss to evenly coat the vegetables.

Alternating between various vegetables, thread the vegetables onto the skewers.

Until the vegetables are cooked through and slightly browned, grill the skewers for 10 to 12 minutes, rotating them halfway through.

Serve right away.

Dinner

Chicken grilled with lemon and herbs for supper Ingredients: 4 boneless, skinless chicken breasts; 1/4 cup extra virgin olive oil; 2 tablespoons lemon juice; 2 minced garlic cloves; 1 tablespoon each dried oregano and thyme; salt and pepper, to taste.

Instructions: Combine the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper in a small bowl.

Pour the marinade over the chicken and place it in a big resealable plastic bag. In order to uniformly coat the chicken, seal the bag and toss. Marinate for at least two hours or refrigerate overnight.

Heat your grill to a moderately hot setting.

Take the chicken out of the marinade and throw away any leftover marinade. The chicken should be cooked through after grilling for 6 to 8 minutes on each side.

Serve right away.

Dessert

Berry Yogurt Parfait for dessert Ingredients: two cups of fruit (strawberries, blueberries, and raspberries), one-fourth cup of honey, and two cups of plain Greek yogurt.

• 1/2 cup of cereal

Instructions:

The fruit and honey should be combined in a small pot. Cook the mixture, occasionally stirring, over medium heat until it gradually thickens and the berries release their juice. Turn off the heat and allow to cool.

Layer the yogurt, granola, and berry combination in a jar or glass. Up till the jar is full, keep adding layers.

Serve right away or wait a few hours in the fridge before serving.
